Directions

  1. In a large bowl, combine the shredded carrots, lemon juice, and olive oil. Toss well to coat the carrots evenly.
  2. Add the caraway seeds, salt, and pepper. Mix thoroughly to ensure the seasoning is evenly distributed.
  3. Sprinkle the chopped parsley over the slaw and gently toss again to combine.
  4. Let the slaw sit for at least 10 minutes to allow the flavors to meld together.
  5. Serve immediately or refrigerate until ready to serve. Enjoy!
