Bit of Irish Cheesecake

Directions

Heat oven to 350°F.

Mix graham crumbs and butter; press onto bottom of 9-inch springform pan.

Beat cream cheese and granulated sugar in large bowl with mixer until blended. Add chocolate and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.

Bake 45 to 50 min. or until centre is almost set. Run knife around rim of pan to loosen cake; cool completely before removing rim. Refrigerate 4 hours.

Sprinkle with coloured sugar just before serving.

Tip:

To add a shamrock design, sprinkle the green coloured sugar over a clover leaf-shaped stencil placed on top of the chilled cheesecake.

NON-ALCOHOLIC VARIATION

Add 1/4 cup boiling water to 1 Tbsp. Maxwell House Instant Coffee Original Roast and 1/4 tsp. ground cinnamon; stir until dissolved. Use instead of the liqueur.

  • 1/4 cup butter , melted
  • 3 pkg. (250 g each) Philadelphia Brick Cream Cheese , softened
  • 3/4 cup granulated sugar
  • 3 oz. Baker's White Chocolate , melted
  • 1/3 cup Irish cream liqueur
  • 3 eggs
  • 4-1/2 tsp. green coloured sugar
