Citrus Summer Salad


Step 1
In small bowl whisk orange raspberry mango juice, balsamic vinegar, olive oil, salt and pepper.
Step 2
In second bowl toss segmented oranges, olives, red onion, avocado and spinach, with 1/4 cup (60 mL) of the dressing.
Step 3
Divide onto 6 plates and drizzle over remaining dressing and garnish with basil sprigs.


This recipe is great to serve as a side dish or appetizer topped with Compliments Chili Lime Shrimp Skewers.

2 tsp (30 mL) Orange Raspberry Mango Pure Fruit Juices

1 tsp (15 mL) Balsamic Vinegar

1/2 tbsp (60 mL) First Cold Pressed Extra Virgin 100% Olive Oil

Salt and cracked black pepper, to taste

1 Each Blood and Navel orange segmented

1/2 cup (125 mL) Black olives, pitted and slivered

1/2 Red onion, small diced

1 Avocado, pitted, peeled and chopped

6 cups of Baby Spinach

6 Basil Sprigs
