
Crispy Bacon Macaroni & Cheese

Cook the Pasta:
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside. -
Prepare the Bacon:
In a large pan over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate. Leave about 1 tbsp (15 mL) of bacon grease in the pan. -
Make the Cheese Sauce:
Add butter to the pan with the bacon grease and melt over medium heat. Stir in the flour and cook for about 1 minute until smooth. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3–5 minutes. -
Add the Cheese:
Reduce heat to low and stir in the shredded cheddar and Parmesan cheese. Season with salt and black pepper. Stir until the cheese is fully melted and smooth. -
Combine Everything:
Add the drained macaroni and crispy bacon to the cheese sauce, stirring well to coat. -
Top with Breadcrumbs:
Preheat the broiler. Transfer the mac and cheese to a baking dish, sprinkle panko breadcrumbs over the top, and broil for 2–3 minutes, or until golden brown. -
Serve & Enjoy:
