Easy Egg Frittata

  1. Pre-heat your broiler and heat the olive oil in an oven safe sauté pan over medium high heat. Add the chorizo and sauté until some of the fat has rendered out.
  2. Stir in the potatoes and diced red pepper, season lightly and sauté until tender, about 5-6 minutes.
  3. Whisk together the eggs and parsley with a touch of salt and pepper. Turn off the stove top, pour the egg mixture into the pan and shake it gently to spread it evenly. Sprinkle the tomatoes and goats cheese over top of the eggs and set it under the broiler to cook completely, approximately 6-7 minutes.
  4. Remove the frittata from the pan to a cutting board and slice into six even sized pieces. In a bowl, toss together the mixed greens with the balsamic dressing.
  5. Serve the Frittata with a side of mixed greens for a quick and delicious meal.
