Gnocchi with Leeks, Red Pepper & Feta
Makes 4


Step 1

In a large skillet, heat oil over medium-high heat. Add leeks, red pepper and season with salt and pepper. Sauté until tender, about 8 min. Pour in broth, stir until heated through, and remove skillet from heat.

Step 2

Meanwhile, cook gnocchi according to package directions. Combine cooked, drained gnocchi with leek mixture and sprinkle with feta and parsley.

2 tbsp (30 mL) olive oil 2 small leeks, sliced, white parts only 1 red pepper, seeded and diced 1/4 tsp (1 mL) each salt and pepper 1/2 cup (125 mL) vegetable broth 1 pkg (500 g) potato gnocchi 1/2 cup (125 mL) crumbled feta cheese 2 tbsp (30 mL)  chopped fresh parsley
