Grapefruit, Blackberry & Arugula Quinoa Salad

Directions

1. Lemon Vinaigrette: Whisk oil with lemon juice, shallot, honey and salt.
2. Toss arugula, quinoa and grapefruit segments with Lemon Vinaigrette. Sprinkle with blackberries and pumpkin seeds.
Ingredients:
8 cups (2 L) baby arugula
1 cup (250 mL) cooked quinoa
2 grapefruits, segmented
1 cup (250 mL) blackberries
2 tbsp (30 mL) pumpkin seeds, toasted
LEMON VINAIGRETTE:
3 tbsp (45 mL) olive oil
2 tbsp (30 mL) lemon juice
1 small shallot, minced
1 tbsp (15 mL) honey
1/2 tsp (2 mL) salt
