Grapefruit, Blackberry & Arugula Quinoa Salad

Directions
- 1. Lemon Vinaigrette: Whisk oil with lemon juice, shallot, honey and salt.
- 2. Toss arugula, quinoa and grapefruit segments with Lemon Vinaigrette. Sprinkle with blackberries and pumpkin seeds.

- 8 cups (2 L) baby arugula
- 1 cup (250 mL) cooked quinoa
- 2 grapefruits, segmented
- 1 cup (250 mL) blackberries
- 2 tbsp (30 mL) pumpkin seeds, toasted
- LEMON VINAIGRETTE:
- 3 tbsp (45 mL) olive oil
- 2 tbsp (30 mL) lemon juice
- 1 small shallot, minced
- 1 tbsp (15 mL) honey
- 1/2 tsp (2 mL) salt
