Jamaican-Style BBQ Chicken

Directions

  1. In large bowl, stir together ginger ale, thyme, oil, lime juice, soy sauce, garlic, salt, pepper, cinnamon and allspice. Add chicken; turn to coat. Cover and marinate in fridge 1 to 4 hr.
  2. Cook chicken on grill preheated to medium, 20 to 25 min., or until thickest part of meat reaches 165°F (74°C) on an instant-read thermometer. Turn chicken pieces often. In last 2 min. of grilling, brush with Spirited Mickie Dark & Stormy Rum-Spice BBQ sauce.

  • 1 cup (250 mL) Compliments Ginger Ale
  • 2 tbsp (30 mL) finely chopped fresh thyme
  • 2 tbsp (30 mL) canola oil
  • 2 tbsp (30 mL) lime juice
  • 2 tbsp (30 mL) soy sauce
  • 2 cloves garlic, minced
  • 1/2 tsp (2 mL) salt, pepper, ground cinnamon and allspice
  • 3lb (1.5 kg) bone-in, skin-on chicken pieces (breast, thigh or leg)
  • 1/2 cup (125 mL) Sensations by Compliments Spirited Mickie Dark & Stormy Rum-Spice BBQ sauce
