Fry the bacon until crispy. Drain off the fat, dry the bacon bits on paper towel, and then cool to room temperature.Combine the bacon and remaining ingredients in a bowl, reserving a tiny bit of the bacon, cheese and green onion for garnish.
Refrigerate the dip and garnish until ready to serve.
When ready to serve, spoon the dip into a decorative bowl, garnish the top, set on a platter and surround with crisp, raw vegetables for dunking.
Tip: For an ultra rich dip, use full fat versions of sour cream and mayonnaise. Instead of cheddar, try another type of tangy cheese in this dip, such as aged Gouda. To make a simple, bite-sized appetizer, stuff pieces of celery with this dip.
