Parmesan and chili roasted broccoli crowns

Directions

  1. Preheat oven to 425°F (220°C). Arrange broccoli, florets up, on parchment paper-lined baking sheet.
  2. In small bowl, whisk together oil, garlic, chili and salt. Brush over broccoli. Sprinkle 2 tbsp (30 mL) Parmesan over top.
  3. Bake 15 to 18 min. until broccoli tender-crisp. Transfer to platter. Sprinkle with remaining 2 tbsp (30 mL) Parmesan cheese.
Tip: Make this kid-friendly by omitting the chili.

  • 2 lb (1 kg) broccoli florets 
  • ¼ cup (60 mL) olive oil 
  • 3 cloves garlic, minced
  • 1 red finger chili, seeded and finely chopped
  • ¼ tsp (1 mL salt 
  • ¼ cup (60 mL) grated Parmesan cheese, divided
