Pomegranate, Fennel & Orange Salad

Directions
In a large bowl, combine all the ingredients. Marinate for 15 to 20 min. Divide among 8 small plates and serve.
Ingredients:
- 2 pomegranates, seeds removed
- 5 navel or blood oranges (or a mix of both), peeled and sliced into segments
- 1 cup (250 mL) thinly sliced fennel
- 2 tsp (10 mL) honey
- 5 tsp (25 mL) olive oil
- 1/4 cup (60 m) fresh mint, torn
- 1/4 tsp (1 mL) each salt and pepper (optional)
