Pork Side Ribs with Hoisin Chili Glaze
Makes 4

  1. Preheat the oven to 325 degrees F. Cut the pork into 2 to 3 bone pieces. Place the ribs, meaty-side up, in a single layer on a large, sided baking pan and season with salt and pepper. Pour the beer or juice into the bottom of the pan. Cover and bake for 1 hour and 45 minutes, or until the ribs are very tender, and then remove from the oven.
  2. Preheat you barbecue to medium-high. Combine the remaining ingredients, except green onion, in a small pot and bring to a simmer. Simmer 3 minutes, and then cover and reserve on low heat.
Grill the ribs 3 to 4 minutes per side, or until nicely charred. Turn the ribs meaty-side up and baste with half the hoisin mixture. Close the lid and cook 5 minutes more. Transfer the ribs to a platter, drizzle with the remaining hoisin mixture, sprinkle with green onions and serve.
