Roasted Sweet Potatoes & Pineapple

Directions

  1. Heat oven to 400ºF.
  2. Combine potatoes and pineapple in large bowl. Mix remaining ingredients. Add to potato mixture; toss to coat.
  3. Spread onto rimmed baking sheet sprayed with cooking spray.
  4. Bake 45 to 50 min. or until potatoes and pineapple are tender and golden brown, turning after 30 min.

Recipe Extra

For more flavour, add 1/4 tsp. cayenne pepper to dressing mixture before tossing with the potato mixture.

Ingredients:
  • 2 lb. (900 g) sweet potatoes (about 4), peeled, cut into 3/4-inch chunks
  • 3 cups fresh pineapple chunks (3/4 inch)
  • 1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
  • 1/4 cup packed brown sugar
  • 1 Tbsp. non-hydrogenated margarine, melted
