Strawberry Arugula Salad with Balsamic Vinaigrette

Directions
- In a large bowl, combine the strawberries, olive oil, vinegar, salt and pepper.
- Add arugula and mint to strawberry mixture. Gently toss to combine and serve immediately.
Ingredients:
- 6 cups (1.5 L) fresh strawberries, washed, dried, hulled and halved
- 2 tbsp (30 mL) olive oil
- 2 tbsp (30 mL) Aged balsamic vinegar of Modena
- 2 tsp (5 mL) each salt and pepper
- 1 1/2 cups (750 mL) loosely packed arugula, washed and thoroughly dried
- 2 tbsp (30 mL) sliced mint
