Thai Chicken and Rice Soup

  1. Remove packet of fish powder from soup kit.
  2. Add fish powder, remaining soup kit, broth, chicken, mushrooms and coconut milk to a medium pot. Stir. Bring to a boil.
  3. Reduce heat to low and simmer, covered, for 20 minutes or until chicken is cooked through.
  4. Stir in lime juice and serve.



Garnish with chopped peanuts and fresh cilantro.

  • 2/3 cup (160 mL) coconut milk
