Tomato Quiche with Bacon & Goat’s Cheese
Makes 8


Step 1

Preheat oven to 450°F (230°C). Divide tomatoes, bacon and green onions evenly between the two frozen pie shells.

Step 2

Whisk eggs and milk together; season well with salt and pepper. Pour evenly over the 2 quiches. Sprinkle cheese crumbles evenly over each quiche.

Step 3

Bake 10 min. Reduce oven temperature to 350°F (180°C) and continue baking until quiches have set, about 30 min. Let cool slightly and serve with a side salad for a light meal.

1 can (796 mL) diced tomatoes, well drained
1/2 pkg (32 g) fully cooked reduced-sodium bacon, diced
3 green onions, thinly sliced
1 pkg (340 g) frozen deep dish pie shells
6 eggs
1 1/4 cups (310 mL) milk
1 tub (113 g) goat's milk cheese crumbles
