Pomegranate, Fennel & Orange Salad
Makes 8


In a large bowl, combine all the ingredients. Marinate for 15 to 20 min. Divide among 8 small plates and serve.

2 pomegranates, seeds removed
5 navel or blood oranges (or a mix of both), peeled and sliced into segments
1 cup (250 mL) thinly sliced fennel
2 tsp (10 mL) honey
5 tsp (25 mL) olive oil
1/4 cup (60 m) fresh mint, torn
1/4 tsp (1 mL) each salt and pepper (optional)
